How It All Started
Simona's Bistro was born from a simple idea: to create a warm, inviting space where our community could gather for an exceptional cup of coffee and a delicious, home-cooked meal. Tucked into the East Shore neighborhood on the waterway, we've become what regulars call a "hidden gem" — a cozy, intimate spot with eccentric artwork on the walls, a European-inspired aesthetic, and a Mexico Chic vibe that's unlike anything else in The Woodlands.
Our menu is a reflection of who we are. You'll find the bold, comforting dishes we grew up loving — Chilaquiles Verdes, Enchiladas with house-made mole, Molletes — right alongside brunch classics like French Toast Nuggets, Avocado Toast, and fresh-baked croissants. And whether you're here for a Lavender Vanilla Latte, a refreshing Matcha, an Iced Caramel Latte, or a Michelada to wind down, we've got you covered.
We are coffee lovers at heart. Our lattes are the most ordered item in the house — over 4,764 served since January 2025, with Mocha and Lavender Vanilla among the most requested flavors. But we're equally proud of our Chilaquiles Verdes, which have become a destination dish for brunch lovers across The Woodlands. People don't just come here for breakfast or lunch — they come for the experience: patio dining with your dog, latte art worth photographing, and authentic flavors you won't find at any chain.
